You guys!

I’m reporting this to you late night, straight from bed on my iPhone. I HAD to share with you the yumminess of my day because like I’ve told you time again, I won’t ever keep a good thing or even a bad thing from you. That’s what sisterhood is about, right??‍♀️

Because this is so last minute I don’t have pics of the cooking process, but I did capture the final result!

Remember that amazing In N Out Inspired Vegan Burger recipe I shared earlier this year? Well Beyond Meat, which created the patty from my In N Out Inspired Vegan Burger, has launched 3 sausages!

This is NOT a drill!

The sausages come in the flavors hot Italian, sweet Italian and original bratwurst. They are available at limited restaurants in major markets and was recently released to Whole Foods nationwide.

Y’all know I’m basically anti-processed, faux meat. But it’s Beyond Meat. They are the only exception in my book. I was still a bit skeptical though. I mean I haven’t had sausage in over 7 years. How would my body and tastebuds react?

However after watching tons of reviews, I decided that this needed to tried. So at like 11pm last night I ordered the Hot Italian sausage along with 2 organic russet potatoes, a red onion and sweet peppers via Amazon Fresh.

Fresh always comes through in the clutch. I recommend it for Whole Foods lovers that do not have a Whole Foods nearby. I live in Los Angeles, I have 3 that are less than 10 mins from me AND a 365 store is being built across the street from my house. My excuse is that it was my day off and I just wanted to chill!

Like a kid on Christmas, I could hardly wait for my delivery to arrive this afternoon. I literally did not consume anything all day except water because I wanted my tummy to be empty to really experience the hype.

I mean I had good cause to act like this because, I have not had a decent savory breakfast since becoming a vegan. I don’t eat soy products so tofu based scrambles and sausages were never an option to me. Basically I’ve been savory breakfast deprived for 7 years.

Beyond Meat did not disappoint. The sausage smelled and looked like a real pork sausage. It is covered with a vegan casing and everything. Biting into the sausage, you have to really bite through the casing to get to the soft, mushy insides. Talk about the real experience.

Now if you’re anything like me, you may be a bit freaked out by the similarities to meat. However I think it’s good to have items like this available to beat any cravings. Because this is processed and has a lot of oil in it, I do not recommend eating this sausage everyday. It is a good treat to indulge in every now and then.

Okay so let’s get into the deets of this recipe. I made one of my old time faves, spicy sausage and potatoes. It was delicious AND filling. Let’s just say I haven’t had anything else to eat today.

Spicy Vegan Sausage and Potatoes

  • 2 Hot Italian Beyond Sausages
  • 2 organic russet potatoes
  • 1 half red onion (large cubes)
  • 6 small sweet peppers (orange, yellow, red) (cubed, about 4 pieces per pepper)
  • 1 tbsp fresh parsley (finely diced)
  • 2 tsp grapeseed oil
  • 2 tsp smoked paprika
  • 2 tsp garlic powder
  • 1 tsp fresh jalepeno (finely diced)
  • 1 tsp cayenne pepper
  • salt and pepper to taste (I use about 2 tsp of each)
  1. Put 1 tbsp of oil in skillet. Preheat over medium fire.

  2. Peel the potatoes. Cut potatoes into medium sized cubes. To get the perfect size, I cut each potato into four pieces and then cut about 4 pieces out of each fourth. Place in bowl.

  3. In a separate bowl, mix the onions, peppers, jalapeños and seasoning. Move to the side.

  4. Once oil is bubbling pour potatoes into skillet and allow to brown on the first side for about 5 mins or until the pieces of potato that are hitting the bottom of skillet are a golden brown color.

  5. Once browned flip over potatoes and cover for about 8 mins so that potatoes can soften a bit. With some tension, you should be able to put a fork through the potato. 

  6. Remove cover and pour in onion mix into the skillet. Allow the potatoes to fry and the onions and peppers to caramelize. Keep flipping until potatoes are crispy brown all over.

  7. Leaving skillet over the fire, move the potato and onion mix into a bowl.

  8. Transfer the sausages into the skillet. Don’t add any oil because the sausage produces it’s own oil. Cook on each side about 3 mins.

  9. Take sausage out of skillet and cut into about 8-10 slices per link.

  10. Pour the sausage, potato mix and parsley back into the skillet and allow to cook together for a few more mins. During this time, taste test to see if any more salt or pepper is needed.

  11. Serve!

    Thanks for this recipe! I modified it a bit because we didn’t have any jalapeños or fresh parsley and I added some Berbere spice to the veggies. It was wonderful and very easy to cook!

    I love Beyond Meat products. Tonight, I wanted to make “andouille sausage” with creamy polenta. I wasn’t sure if I should slice up the Beyond Sausage first, and then cook it, or cook it whole and then slice. I’m using your Sausage and Potatoes recipe as a guideline which means that I’m cooking the sausage whole and then slicing. Thank you!
