SkinnyTaste did their thing with this Cheesy Rotisserie Chicken Enchilada Skillet recipe. In honor of my favorite day out of the week, Taco Tuesday, I wanted to share this recipe with you that I’ve been obsessing over lately.
Okay, so these aren’t exactly tacos BUT the ingredients are that of what you could use for a taco. So that counts right?!
Think a savory, delicious taco pie and that is exactly what this Cheesy Rotisserie Chicken Enchilada Skillet is!
Being that I’m a vegetarian, I swap out the chicken with pulled jackfruit that I sauteed with salt and pepper for about 3 mins. I use the same measurements of jackfruit that the recipe requires for the chicken. And voila, the Cheesy Rotisserie Chicken Enchilada Skillet is vegetarianized.
